Directions
- To dissolve, combine warm water, yeast, 1/3 cup honey, and a large bowl. Mix in 5 cups of bread flour and stir. Allow to rest for 30 minutes or until the mixture is bubbly and firm.
- Add three tablespoons of melted butter, 1/3 cup of honey, and season with salt. Mix in 2 cups whole grain flour. Place the dough on a floured surface. Knead in 2 cups of whole wheat flour. Knead dough until it pulls away from the work surface. If necessary, add more whole wheat flour. The dough should feel a little tacky but not sticky.
- Place the dough in a greased bowl and turn once to coat it. Cover the bowl with a dish towel, and let rise in a warm area for 45 minutes to an hour.
- Three 9×5-inch loaf pans should be greased. Divide the dough into three loaves. Allow the dough to rise in the prepared loaf pans for 45 minutes to an hour.
- Preheat the oven to 350°F (175° C) while you wait.
- Bake the loaves until golden brown in the oven for 25-30 minutes. Do not overbake.
- To prevent the crust from becoming hard, lightly brush the tops with the remaining two tablespoons of butter. Allow cooling completely.
