Poached eggs with smoked salmon – squeak bubble recipe

Make a potato hash that is different. You can add cabbage to improve the texture and nutrition.



  • Boil the potatoes in boiling water until they are tender. Drain them.


  • In a nonstick skillet or wok, heat the oil. For a few minutes, heat the oil in a non-stick frying pan or wok. Then, cut and squash the potatoes into small pieces, then add them to the pan with the chives. Cook for 4-5 minutes, then flip it over (don’t be alarmed if it falls apart) and cook for another 4-5 minutes.


  • Bring a small saucepan of water to a boil. Once the water has boiled, reduce heat to simmer. The eggs should be poured into the saucepan and allowed to simmer for 3 minutes, or until the yolk has set. Use a slotted spoon to remove the eggs from the pan and let cool on kitchen paper.


  • Divide the bubble & squeeze between 2 plates. Place the poached eggs and smoked salmon on top. Finally, grind some black pepper to taste.


  • 1 tbsp Rapeseed Oil
  • 140g finely chopped white cabbage
  • 2 spring onions, finely chopped
  • 300g whole new potato
  • 1 tbsp chopped chives
  • 2 medium eggs , at room temperature
  • Smoked salmon 75g
